Sicilian Green Salad (serves 4-6)
1 head romaine lettuce, washed and drained
1 can (2 1/4 oz) sliced green olives, well drained
2 peeled oranges (white membrane removed), thinly sliced crosswise
1/4 cup orange juice
2 tsp vinegar
1/2 tsp salt
1/4 tsp paprika
1/4 cup olive oil
1/4 cup freshly chopped Italian parsley
1. Break lettuce into bite-size pieces and put in a large salad bowl. Top
with olives and orange slices.
2. In a small bowl, mix orange juice,
vinegar, paprika, salt, and oil. Pour mixture over salad and mix.
3. Sprinkle top with parsley. Serve with some good crust
bread and enjoy!
