Mediterranean Delights
Shrimp with Broccoli Rabe Serves 4
2 bunches broccoli rabe, trimmed
1 Tbsp olive oil
4 garlic cloves, minced
1 1/4 cup chicken or vegetable broth
1/4 tsp salt
1/2 tsp red pepper flakes
1 tsp Italian parsley, chopped (or 1/2 tsp dry parsley flakes)
1 1/2 lbs extra-large shrimp, peeled and deveined
1 can cannellini beans, rinsed and drained (about 14 oz can)
1. Cook broccoli rabe in boiling salted water. Boil at first then reduce heat and cook on medium for about 5 minutes. Do not overcook, rabe should remain somewhat firm and look bright green. Drain and set aside.
2. In a large saucepan, heat olive oil and add garlic over medium-high heat. Cook just under one minute. Add the broth, salt, red pepper, and bring to a boil. Reduce heat and cook for 5-6 minutes.
3. When broth is reduced to half, add the shrimp. Cook shrimp only a few minutes, just until they begin to curl. Sprinkle with parsley. Add the broccoli rabe and beans. Cook for 4 minutes more over medium heat, stirring carefully. Season with salt and serve hot. This is a protein rich meal and can be served over your favorite pasta. Since the sauce is light and thin, angel hair pasta or other thin pasta would be a good match. Enjoy!
