Mediterranean Delights
Gambas al Ajillo 1 cup extra-virgin olive oil
Serves 6 – 8
8 garlic cloves, minced or pressed
2 bay leaves
2 Tbsp crushed red pepper flakes
2 Tbsp finely chopped flat leaf parsley
1 ½ lbs shrimp, peeled and deveined, tails removed
Salt and pepper

1. Preheat oven to 500 degrees F. Pour the oil into a shallow casserole dish that is about 11 inches by 7 inches. Add the garlic, bay leaves, pepper flakes and parsley. Bake until the garlic is sizzling about 2-4 minutes.
2. Meanwhile, rinse shrimp in very cold water, drain and pat dry with dish cloth. Carefully remove casserole dish from oven and add shrimp and stir. Be very careful as the shrimp hitting the hot oil may cause splattering!! Return to oven and bake just 2 to 3 minutes. Remove from oven. Throw out the bay leaves. Season with salt and pepper and toss together and serve immediately. This looks so tempting when you serve it immediately and shrimp is still sizzling! Serve with Spanish red rice and a salad. Enjoy!
