Mediterranean Delights
1/2 lb pasta
1 lb large shrimp, peeled and deveined, rinsed, tails removed
1/4 tsp salt
2 Tbsp olive oil
1/2 to 1 tsp red pepper flakes
1 1/2 cups marinara sauce
1/4 cup finely chopped fresh parsley

1. Cook pasta in salted boiling water for about 10 minutes, should be al-dente. Drain, reserve 1/2 cup of the cooking water.
2. Meanwhile, rinse shrimp in cold water and season shrimp with salt. In a large saute pan, heat oil over med-high heat. Add pepper flakes, stir and immediately add the shrimp. Cook for 2 minutes, turn and cook 2 minutes more.
3. Heat marinara sauce, bring to a boil then simmer for about 3 minutes.
3. Pour pasta in a large serving platter. Pour sauce over pasta. Layer shrimp over pasta and sprinkle with parsley, drizzle a little extra olive oil over entire platter and serve hot!
This is a thick sauce, so a large noodle pasta (linguini or fettucine), or penne would be good at holding the sauce. You can prepare this with pre-cooked shrimp, rinse in cold water and remove tails. Cook as above. Enjoy with a green leafy salad!
