Seafood Salad (serves 6)
water (for boiling)
1 lb thawed and cleaned squid, crab meat can be used in place of squid
1 can (10 oz) whole clams
zest of 1 lemon (cut into thin strips)
1/4 cup lemon juice
1/3 cup olive oil
2 Tbsp finely chopped parsley
salt and pepper
1. In a deep pan over high heat, boil enough water to cover the squid.
Drop in squid and cook until its edges curl. Drain and put aside. If
using crab meat, place in a large bowl, look for any shell pieces, and
separate lightly.
2. Drain liquid from clams. In this liquid add lemon zest and bring to a
boil. Remove from heat and stir in clams and squid (or crab meat).
Cover and chill for 10-20 minutes.
3. Stir in lemon juice, olive oil, and parsley. Add salt and pepper to taste.
Serve and enjoy cool, but not freezing cold. Garnish with lemon
wedges and fresh sprigs of flat leaf parsley.
