3/4 cup peeled roasted red peppers (canned or fresh)
1/4 cup whole almonds or hazelnuts, toasted
1 Tbsp Apple Cider vinegar
2 Tbsp olive oil
1 Tbsp minced garlic
1. Place roasted peppers, nuts, vinegar, garlic, and olive oil in food processor and whirl until puréed.
2. Refrigerate and serve with your favorite Spanish meal. This sauce can be made with a few variations: adding roasted tomatoes, one toasted bread slice, and hot red pepper flakes. Enjoy!
