Mediterranean Delights
12 medium artichokes, about 2/12 - 3 inches in diameter
Acid water (1 Tbsp vinegar to 1 qt water)
Salted water for boiling
2 Tbsps lemon juice
2 Tbsps vinegar
1 Tbsp chopped fresh mint leaves, or 3/4 tsp dry mint
1/4 tsp salt
1/4 tsp oregano leaves
1/2 tsp lemon zest
1/8 tsp freshly ground black pepper
3/4 cup olive oil

2. Drain artichokes well and arrange in a single layer in a shallow dish.
3. Combine lemon juice, vinegar, mint, salt, oregano, lemon zest, and
pepper. Whisk together and gradually whisk in olive oil until well
blended. Pour over artichokes. Cover lightly and let stand. Then
carefully turn each artichoke in the dressing and stand them up with
the stems up.
4. Serve at room temperature, with a knife and fork for each guest. The
fuzzy chokes can be scooped out by each guest. Enjoy!
