Mediterranean Delights 

Middle Eastern Roasted Turkey


1 large Turkey about 15 to 18 lbs

Salt

Pepper

1 ½ tsp each of allspice, cinnamon, and paprika (or cayenne)

Olive oil

5-6 large garlic cloves

1 celery stalk

 

It is best to roast the turkey unstuffed.  Prepare the stuffing separately and make enough for all.  If you like to present the turkey stuffed, do so after it has completely cooked and bring it to the table with stuffing inside it.  

1.   Completely thaw the turkey in the refrigerator at least a day
      ahead.  

2.   Preheat oven to 350 degrees F.

3.   Remove neck and giblets from inside the turkey. 

        Rinse turkey in cold water very well including the inside.  Cut off 
        any excess fat.   
Pat the turkey dry with paper towels. 
4.    Brush with olive oil.  Season with salt, pepper, and spices inside 
        and out.  Place turkey in large roasting pan.  Trim ends of garlic 
        cloves and place into turkey cavity, neck area, and near legs.  Place 
        rinsed celery stalk into center of cavity.  Cover loosely with foil and
        bake for 4 to 5 hours.   Baste every 45 minutes to every hour.
5.    Remove foil during last half hour to roast skin.  Allow turkey to set 
        before slicing.  Serve with the rice and meat stuffing Middle 
        Eastern style.  Enjoy!
