Peel a strip of peel from around the middle of each potato. Place in a bowl of cold water. Set aside.
Heat a large skillet over medium-high heat; add oil. Saute onion and garlic for 5 minutes or until softened. Add broth and 3/4 cup parsley and mix well. Bring to a boil.
Place the potatoes in the skillet in a single layer. Allow to return to a boil. Reduce heat and cook, covered for 10 minutes or more until potatoes are tender.
Remove potatoes with a slotted spoon or tongs and place on serving platter. Add pepper to skillet and stir. Pour contents of skillet over potatoes and sprinkle with remaining fresh parsley. Enjoy!
