Yogurt Parfait
Makes 4-6 servings
1 container (2 lbs) Plain low-fat or nonfat yogurt
6 – 8 oz Fresh blueberries, rinsed in cold water
Honey
Walnuts or almonds, coarsely chopped
Cinnamon (optional)
Whipped cream (optional)
Many countries of the Mediterranean make yogurt and eat it in main meals, on its own, or as sweet dishes. Here is a healthy way to enjoy your yogurt. Try other fruits that you like, too.
1. Place about 1/4 cup yogurt in each glass. Sprinkle with cinnamon, if desired. Top with 1 to 2 tablespoons of fresh blueberries.
2. Drizzle the blueberries with honey. Repeat with another layer of yogurt and blueberries. Drizzle with honey.
3. Top each glass with walnuts or almonds and add a spoon of whipped cream, if desired. Drizzle with a little honey.
Enjoy for a healthy breakfast with your morning coffee. Also, this is a tasty mid-morning snack or afternoon pick-up snack. It is loaded with antioxidants, vitamins, as well as, protein and calcium. Enjoy!
