Raisin Cake with Almonds
4 eggs
1/2 cup softened butter or margarine
1 tsp vanilla extract
dash of ground cardamom
1 cup milk
3 cups sifted flour
1 cup sugar or sugar substitute
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 cup raisins or minced pitted dates
1/3 cup chopped blanched almonds or chopped walnuts
1. Preheat oven to 325 degrees F. Grease then flour a loaf-shaped pan.
2. Cream the eggs, butter, and vanilla with mixer. Add milk and stir.
Slowly add the flour, sugar, cardamom, baking powder, salt, and
cinnamon Blend until smooth. Then stir in raisins or dates and the
nuts. Spread the mixture into the pan.
3. Bake for 35 minutes (or until firm). Slice and place on individual
plates. This cake is so tasty and flavorful it doesn't need much else,
but you can sprinkle with powdered sugar before slicing for a little eye
appeal. Enjoy! Tastes great warm.
