Oven-Roasted Potatoes with Rosemary
Serves 4
1 lb new potatoes, washed, peeled, cut into small cubes
¼ cup olive oil
Sea salt
Freshly ground black pepper
2 Tbsp fresh rosemary sprigs
Wash potatoes. Peel them, you can leave small amounts of peel if desired. Cut into cubes. Preheat oven to 425 degrees F.
Toss potatoes with olive oil. Place in a baking dish. Sprinkle with sea salt and black pepper. Toss with rosemary sprigs.
Bake in preheated 425 degree F oven for 45 minutes. Turn frequently.
