Polenta (Serves 8-10)
6 cups water
1 tsp salt
2 cups polenta (coarse ground cornmeal)
3 Tbsp butter (optional)
grated or shredded cheese (Parmesan, Romano, Fontina, or Jack will do)
sauce (optional)
1. In a large pan over high heat bring water and salt to a boil; gradually
stir in polenta, adding a little at a time.
2. Lower heat and simmer carefully, stirring often until mixture is thick
(around 30 minutes); use a long-handled spoon to prevent burning.
Stir in butter, if desired, and add salt if necessary.
3. Butter a deep medium-sized bowl. Spoon polenta into bowl and let it
set for 10 minutes.
4. Flip it onto a flat plate. Cut into thick slices and serve hot with butter,
cheese, meat, or tomato sauce with meat and/or vegetables. Enjoy!
