Orange Salsa
serves 6
3 large oranges, peeled and diced
1 jalapeno pepper, seeded and finely chopped
1 large shallot, peeled and finely chopped
1 1/2 Tbsps fresh cilantro, minced
2 Tbsp cider vinegar
1 tsp honey
1/4 tsp salt
Combine oranges, jalapeno, shallot, cilantro, vinegar, honey and salt in a medium bowl. Stir until well blended and refrigerate. Taste and adjust seasonings before serving. Serve with Beef Burgers with cheese. Enjoy!
