Mediterranean Salad (serves 8)
4 plum tomatoes, seeded and finely diced (about 1 cup)
1 seedless cucumber, finely diced
1 diced yellow bell pepper ( about 1 cup)
4 thinly sliced scallions (about 1/4 cup)
4 Tbsp lime or lemon juice
1/4 cup olive oil
1 tsp salt
1/2 tsp pepper
1. Place tomatoes, cucumber, bell pepper, and scallions in bowl before
mixing.
2. Combine juice and olive oil in a bowl whisking to blend. Add salt and
pepper before pouring over vegetables. Mix and adjust seasoning, if
needed and enjoy!
A variation of this salad is prepared throughtout the Mediterranean area and is very fresh and delicious!
