Mediterranean Delights
Guacamole Dip
2 large, ripe avocados
1 small to medium Spanish onion (red onion), finely minced
1 Serrano chile pepper, seeded and minced (optional)
3 Tbsp fresh chopped Cilantro
2 to 3 Tbsp fresh lime (or lemon) juice
1 tsp salt
Sprinkle freshly ground black pepper
1 small to medium ripe tomato, chopped
¼ cup sour cream (optional)
Wash avocados in cold water. Slice in half and separate. Remove large seed by pulling out with a knife. In a medium bowl, scoop out avocados and mash. Discard peel.
Add the onions and pour lime juice (or lemon juice) over the onions. Then add the chile, cilantro, salt and black pepper. Chill in refrigerator and prepare remaining steps when ready to serve.
Just before serving, add the chopped tomatoes. Add the sour cream to the center, if desired.
Serve with tortilla chips, pita bread or pita chips, wheat crackers, and fresh vegetables. This is simple to prepare and tastes so delicious.
