Mediterranean Delights 

Grilled Ground Beef
Kafta

Serves 8

3 lbs ground beef (ground extra fine) (ground lamb or a combination of lamb and beef, or ground turkey may be used)
1 large onion, chopped 
3/4 cup fresh flat-leaf (Italian) parsley, chopped
salt
freshly ground black pepper
1 tsp ground nutmeg (optional, the flavors of the onion and parsley are so delicious alone with the meat)
 
1.   Place Onion and Parsley in food processor and pulse until finely chopped then add beef.

2.  Sprinkle meat mixture with salt to cover top surface.  Sprinkle with freshly ground black pepper to taste.  If desired, add ground nutmeg.  Mix the seasoned ground beef with the onions and parsley together with a fork. 

3.  Make small round patties out of the meat mixture and place 4 to 5 patties onto a flat metal skewer.

4.  Shape the meat into a cigar shape on the skewer.

5.   Grill for 15-20 minutes over hot flames, turning about three times (or until done.  Take warm pita bread and cover it over cooked meat. Using the pita bread pull the meat down off the skewer and enclose it with the bread.  Serve immediately.

6.   This grilled beef tastes wonderful over rice along with a salad, or Tabooleh.  Also, serve with various pickles, olives, yogurt and hummus.

If you are not grilling you can bake the meat on skewers in a preheated over or under the broiler.  Bake at 350 degrees F,  for 20 to 25 minutes.
