Mediterranean Delights 

Greek Shrimp with Green Beans (Serves 6)

1 1/4 lbs raw shrimp, peeled and deveined (tails can be on or off)
1/2 lb green beans, trimmed and halved
1/4 cup vinaigrette salad dressing
2 cups yellow and red cherry tomatoes, halved
1/4 cup chopped fresh flat-leaf parsley
1 clove garlic, minced
1 Tbsp Greek seasonings
2 Tbsp olive oil

 
1.  In a bowl, toss together the shrimp with the Greek seasonings.  Set aside.

2.  Bring a large pot of salted water to boil.  Add green beans and simmer for 5 minutes.  Set aside. 

3.  Heat olive oil in a large nonstick skillet over medium-high heat.  Saute garlic for a minute.   Add shrimp in a single layer and cook for 3-4  minutes per side.  Reduce heat to medium and add vinaigrette, tomatoes and parsley to the skillet and cook for 2 minutes while stirring.  If the liquid is absorbed too quickly, add a little water and stir.  The dish should have some liquid.

4. Remove shrimp from heat and stir in the green beans until well combined.  Serve immediately with warm pita bread, rice, or pasta.  Enjoy!
