Mediterranean Delights
Greek Salad 1 large tomato
Serves 4-6
1 seedless cucumber
2 radishes
1 red or white onion
4 oz feta cheese
1/2 cup pitted black Kalamata olives
3 Tbsp lemon juice
3 Tbsp olive oil
Salt
Pepper
1/2 Tbsp dried oregano leaves
Red lettuce leaves (about 1/2 a head)
5 Romaine lettuce leaves

1. Wash all vegetables in cold water. Chop the tomato into cubes. Slice the cucumber, radishes and onion into thin rounds. Cut the feta into cubes.
2. Combine the vegetables with the olives in a bowl. Add the feta cubes and toss lightly. Sprinkle with salt and a dash of pepper. Drizzle with oil and lemon juice. Sprinkle with oregano and toss lightly.
3. Lay the red and romaine lettuce leaves on a serving plattter. Pour the salad over the leaves and serve. Adjust seasoning and dressing as you like. If available, fresh oregano tastes especially good on a Greek salad. Enjoy!
