Mediterranean Delights
Greek Diced Salad
Serves 4-6
4 Tbsp non-fat, plain yogurt
2 Tbsp mayonnaise
2 Tbsp lemon juice
2 Sprigs fresh mint leaves, rinsed and chopped
2 cloves garlic, minced
1 tsp salt
Dash of black pepper (if desired)
1 medium to large zucchini, finely diced
1 large red bell pepper, seeded and finely diced
1 bunch radishes, finely diced
1 15 oz. can chickpeas, rinsed and drained
4-6 large lettuce leaves, Romaine or Boston, well rinsed
1. Whisk yogurt, mayo, lemon juice, mint, garlic and salt in a small bowl until well blended.
2. Toss zucchini, bell pepper, radishes and chickpeas in a large bowl. Pour dressing over the vegetables and toss together. Sprinkle with black pepper, if desired.
3. Place lettuce leaves on serving platter and pour salad on them, or place in individual bowls with one lettuce leaf per bowl and use lettuce to scoop up salad and enjoy!
