Mediterranean Delights
Fish in Sesame Sauce
Serves 4
1 lb fish (haddock, halibut, or flounder)
juice of 1 lemon
1 to 1 1/2 cup tahini sauce*
Salt
Pepper
1/4 cup chopped flat-leaf parsley
*To make the tahini sauce: combine in a small bowl about 3/4 cup tahini, add juice of 1/2 a lemon and stir well. After it is well blended, add 2 tablespoons of cold water and blend. Add the lemon juice before the water will keep the tahini a brighter color. You can add a little more or less water depending on how thin you want the sauce.

2. Preheat oven to 400 degrees. Bake for 25-30 minutes, depending on thickness of fish. Meanwhile, prepare the tahini sauce as above.
3. Remove from oven and sprinkle with freshly ground black pepper. Brush with tahini sauce and sprinkle with parsley. You can drizzle with a little more lemon and/or olive oil when serving. Serve hot, over rice or pasta and a salad. This is a marvelous dish from Middle Eastern cuisine. Enjoy!
