Feta Fillo Triangles

2 eggs
1 egg yolk
1/3 cup heavy cream
1 lb feta cheese crumbled (drain all liquid)
Pepper
1 lb fillo dough
2 sticks butter, melted (or use olive oil)
Sesame seeds
Preheat oven to 400 degrees F.
Prepare the feta filling:
In a small bowl, add the 2 eggs and cream and whisk together.
Add crumbled feta and mix together until feta is covered and the consistency is thick. Sprinkle with a dash of black pepper and mix.
Prepare the fillo dough:
Lay out the fillo dough on a flat surface. Score the dough into four rows/strips. Cut the rows. Keep the dough moist with plastic wrap or wax paper and cover with a damp cloth.
Prepare the triangles:
Place a strip of dough onto a flat surface and brush with melted butter. Add another strip of fillo on top and brush with melted butter. Add 1 tsp of the feta filling on the corner end of the fillo. Begin to fold over the fillo, over the filling from corner to corner, in a triangular shape until completely folded.
Repeat this process for all the fillo dough and filling.
Place the egg yolk in a bowl and whisk. Brush the egg on the folded triangles. Sprinkle with sesame seeds. Bake for 15 to 20 minutes until golden brown. I have made this and it can be somewhat difficult working with such narrow fillo strips. Sometimes I have made them larger by cutting three rows of fillo strips, rather than four. Serve as a delicious appetizer or as a side dish. Enjoy!
