Mediterranean Delights
10-12 romaine lettuce leaves, rinsed thoroughly
3 large ripe tomatoes
2 large seedless cucumbers
1 green bell pepper
1 bunch green onions
1 bunch fresh Italian parsley
1 bunch fresh mint leaves, or 2 Tbsp dried mint
1 cup olive oil
3/4 cup lemon juice
3 garlic cloves
3 loaves pita bread
salt and pepper
1. Dice tomatoes. Chop mint, parsley and onions fine. Dice cucumbers
and bell pepper. Chop or tear lettuce small. Combine all in a bowl.
2. Cut pita bread into small squares, like the size of croutons. Fry in a
small amount of olive oil until crisp. Remove from heat and drain on
paper towels. Another option is to toast the pita in the oven.
3. Mash garlic and salt together, into a paste. Add lemon juice, and oil to
garlic paste and mix together. Pour over vegetables and mix well.
Season with just a little sprinkle of salt and pepper. Toss salad.
4. Toss pita crisps into salad and serve. You can also offer the pita crisps
on the side for each guest to place on their individual salad. We
sometimes prepare the salad with finely chopped radishes. If you like
radishes, add about 1/2 cup to 3/4 cup into the salad with the other
vegetables. This is very delicious and goes well with any meal. Enjoy!
