Date Molasses Nut Cake
1 pack (13 oz) pitted and pressed dates
2 cups boiling water
2 eggs
2 cups sugar
1 tsp vanilla extract
1/2 cup softened butter or margarine
3 cups sifted flour
1 1/2 Tbsp baking powder
1 tsp baking soda
2 tsp ground cardamom
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
pinch of salt
2 cups coarsely chopped walnuts
1. Preheat oven to 300 Degrees F. Grease and flour a bundt pan.
2. Put dates in a big bowl and cover with the boiling water and put aside
for later.
3. Cream the eggs, sugar, vanilla, and butter until smooth.
4. Sift the dry ingredients flour, baking powder, baking soda and spices
together in a separate bowl. Set aside.
5. In a blender or food processor, quickly whirl the dates and water. Do
this only long enough for them to turn into smaller pieces. Add this to
the egg and sugar mixture.
6 Adding a cup at a time, beat in the flour and spices on low speed. Stir
in the walnuts and spread in the bundt pan.
7. Bake for 1 hr to 1hr 15 minutes or until firm. You can sprinkle with
powdered sugar for a more festive look. Let cool before enjoying.
