Mediterranean Delights
Cucumber Mint Soup (Serves 4)
2 large, seedless cucumbers peeled and halved
2 cups well chilled plain yogurt, low fat or nonfat
1/4 cup chopped fresh mint leaves
Salt
Pepper
Mint leaves for garnish
1/4 cup diced jalapeno pepper, if desired
2. Combine cucumbers and yogurt in a bowl. Stir in the chopped mint and
season. Add jalapenos if you like it a little spicy.
3. Pour into individual bowls and garnish with mint leaves. Serve with a
lamb meal or a spicy meal, this cold soup is very soothing and goes
well with many Mediterranean meals. Enjoy!
