Chocolate Peanut Butter Bonbons
Makes 32
¾ cup vanilla frosting
¾ cup creamy peanut butter
32 mini vanilla wafer cookies
1 pkg. semi-sweet chocolate chips
1 tbs. vegetable oil
¼ cup each red, white, green candy melts
Colored sprinkles (optional)

1. Line baking sheet with wax paper; place rack over wax paper. In a bowl stir together frosting and peanut butter. Using 2 teaspoons of the mixture for each, roll into balls. Press cookie onto bottom of each ball. Arrange on rack 1" apart. Refrigerate until firm, at least 30 minutes.
2. In a microwave-safe bowl microwave chocolate chips and oil on high for 20 second intervals, stirring until melted and smooth. Be careful, not to burn the chocolate! Spoon chocolate over balls to coat. Refrigerate for 10 minutes or until firm.
3. Place each color candy melts in separate microwave-safe bowls. Carefully microwave on high in 30 second intervals, stirring until melted and smooth. Transfer each color to small plastic bags and snip 1/8" off a corner. Pipe decoratively over bonbons; if desired top off with some sprinkles. Refrigerate until set, at least 5 minutes. Enjoy making and eating these delicious bonbons!
