Mediterranean Delights
Chicken Broccoli Frittata
Serves 4-6
1 ½ cups broccoli florets
1 cup chopped cooked chicken
1 medium onion, finely chopped (or 3 green onions, finely chopped)
½ cup finely chopped tomato
1 tsp dry Italian seasonings
¼ tsp to ½ tsp salt
5 eggs (or egg substitute)
¼ cup water
Non-stick vegetable cooking spray

1. Preheat broiler.
2. Spray a large ovenproof skillet with cooking spray. Place on top of stove on medium heat for one minute. Add broccoli, chicken, tomato, onion, seasonings, and salt. Cook about 3 to 4 minutes, stirring a few times. Broccoli should be tender.
3. In a bowl, beat the eggs with water until well blended. Pour into the skillet. Reduce heat to low and cover. Cook about 6 to 8 minutes. Bottom of frittata should be set. Top is still slightly moist. Remove lid.
4. Place skillet with frittata under broiler and broil for 2 minutes. Slice into 4 to six slices and serve. Enjoy for brunch, lunch or even dinner. Make your own variations with different vegetables and add shredded cheese for another tasty option. In most Mediterranean countries it is not unusual to serve eggs for dinner. Enjoy!
