Mediterranean Delights
Carrot, Orange and Radish Salad N. African/Moroccan (Serves 6)
1 lb Carrots, peeled and shredded
1 lg Onion, chopped
2 Tbsp Orange slices, cut into small pieces (save any juices for the salad dressing)
3/4 cup Radishes, thinly sliced
2 Tbsp Lemon juice
1 dash Orange-blossom water, available in many grocery stores today, or import stores
1 dash Cinnamon powder
1/2 cup fresh Cilantro, chopped
Salt
Pepper
3 Tbsp Olive oil
Pita wedges (optional garnish)
1. Rinse all vegetables in cold water and chop, shred and slice for salad.
Then combine carrots, oranges, radishes and cilantro in a large salad
bowl.
2. In a separate bowl, whisk together the olive oil, juices, orange blossom
water, cinnamon, salt and pepper.
3. Pour this mixture over the salad. Cover and chill.
4. Serve garnished with cilantro sprigs, if you like a nice presentation.
Serve with warm pita bread wedges cut into triangles. Enjoy!
