Mediterranean Delights
1 bunch fresh basil leaves with a little of stems
1/3 cup toasted pine nuts
3 garlic cloves, crushed
1/3 cup finely grated Parmesan cheese
1/3 cup olive oil
salt
pepper

1. Cut off roots and some of the stem from basil leaves. Wash
and dry basil.
2. Place basil, pine nuts, garlic, and cheese in food processor and
chop together.
3. While processor is still on, gradually add the olive oil in a thin
drizzle and process until well blended.
4. Season with salt and pepper. Pulse on food processor again a
quick few seconds. Pour into a bowl. Serve over hot steaming
pasta, over crostini toasts, in panini sandwiches or use in other
recipes. Enjoy!
