Basic Hummus (Serves 4 to 6)
Chickpea Dip
1 (15.5 oz) can drained chickpeas
1/4 cup tahini
1/4 cup water
3 Tbsp olive oil
2 Tbsp lemon juice
2 peeled garlic cloves, chopped
1/2 tsp salt
1/8 tsp cayenne pepper
1. Combine the chickpeas, tahini, water, oil, lemon juice, garlic, salt, and
cayenne in a food processor or blender. Add a few more drops of water
if too dry.
2. Puree until smooth, 2 to 3 minutes. Transfer to serving platter.
3. Garnish with lemon wedges, sumac, paprika, whole chickpeas or
chopped parsley. Serve with warm pita bread, low-carb crackers,
vegetables, or bread. Pictured is hummus with falafel which is a good
combination, or enjoy with a plate of eggplant dip!
