Mediterranean Delights
Arabic Coffee
Serves 4
4 demitasse cups of water
3 tsps sugar
4 heaping tsps pulverized Arabic coffee
5 green cardammom seeds (optional)

1. You can use the long-handled coffee pots used to make Arabic coffee. Be sure the water will fit. Otherwise, a medium saucepot will do fine.
2. Fill pot with water, add sugar and coffee. Stir well. Over medium to medium high heat stir coffee. Do not boil. Keep over medium heat and stir. A foam froth should form on top. Add the cardammom seeds and stir for 10 minutes.
3. Spoon the froth into 4 demitasses. Very carefully pour coffee into each cup a little at a time. You want to maintain the foam. Do not stir. Grounds will settle at bottom of pot and bottom of cups. Serve immediately!
