Almond Cookies (Makes 32 Cookies)
1 cup unblanched almonds
1 cup softened butter or margarine
6 Tbsp confectioners' sugar and more for sifting
2 cups all-purpose flour
2 tsp vanilla extract
1/2 tsp almond extract
1. Preheat oven to 350 Degrees F.
2. Prepare two cookie sheets with baking parchment. Finely chop
or grind the almonds in a coffee grinder, but not into a paste.
3. Put the butter in a bowl and beat until smooth. Sift in
confectioners' sugar and keep beating until smooth.
4. Sift in flour and beat until blended. Add the vanilla and almond
extracts and keep beating to create a soft dough. Stir in the
chopped almonds.
5. Spoon the dough into 32 balls about walnut size. Place on the
cookie sheets. Bake in the oven for 20-25 minutes until they
turn brown.
6. Let the cookies firm up for 1 minute, then sift a thick layer of
confectioners' sugar over them.
6. Let them cool completely and add more confectioners' sugar
before serving.
7. Wrap cookies in wax paper and store in a airtight container for a
week at the most. Enjoy with a cup of tea or espresso!
