Thanks for visiting this new website. This a wonderful collection of my recipes from many years of preparing meals. Growing up in an Italian family has given me an appreciation for wholesome foods prepared carefully and using the highest quality of fresh ingredients. One of my earliest memories is helping my mother and grandmother in the kitchen. My sisters and I, would help roll out the pasta dough and gnocchi; it was so much fun pressing the boiled potatoes through the press. There were times even my aunts and cousins joined us in preparing a family feast! My many years of cooking and preparing large meals for catering and restaurants has enhanced and enriched my knowledge of foods and increased my recipe file. My family, extended family and friends have shared beautiful and delicious recipes with me which I have included in this site. Mediterranean cuisine has been recognized as a heart healthy lifestyle and it is second nature to me and my entire family, as well as, my in-laws. I have received many blessings from God in my life, for which I am very grateful, one of them is the love and support of my family and in-laws. Without them, I could not have even begun this website. I am delighted to share it with you now and will add more recipes from my collection.
Mediterranean cuisine has many common ingredients: olive oil, olives, fresh herbs, spices, onions, garlic, fresh vegetables, meats, and aromatic breads. Of course, seafood from the Mediterranean Sea is abundant. Healthy options for many of my recipes are listed. The region also has many unique differences from country to country. These are all included in this collection of recipes and more will be added as the site progresses. Read each recipe carefully beginning with the ingredients list, as well as, the preparation process. You need to be well aware of the items needed to prepare the food and the time involved. You can make some substitutions and experiment with many of these recipes. Whenever your time is short, or the vegetables are not in season, use the finest quality of canned sauces and vegetables. If I cannot get the fresh tomatoes from my mom's garden or my own garden,I prefer organic tomatoes and sauces; you will taste the difference! Also, when using canned or frozen vegetables your best to stick with one made or imported from the country whose has this specialty. Like my mother and her mother, and many other skillful cooks, I seldom measure my own ingredients while preparing a family meal. It took a good amount of effort to make many of these fine foods and write down what I did as I made it. Others, I have written down over the years and adapted many other recipes. Enjoy making, serving and eating these delights as much as we have!
