Mediterranean Delights
Lemon Pepper Fish
1 lb white fish (about 4 pieces) orange roughy, whiting, cod, or other
3 Tbsp butter, softened
1 Tbsp lemon pepper spice
1 Tbsp lime juice
2 tsps honey
1. Rinse fish in cold water and pat dry with paper towels. Place in a baking pan and broil fish 6 to 8 inches away from heat, for about 3-4 minutes, turning once. (Depending on the thickness of the fish, watch carefully so as not to dry out the fish.) Remove from broiler.
Mix together the butter, lemon pepper, lime juice and honey in a small bowl. Spread mixture over fish and return to broil about 4 to 5 minutes more. Serve with green beans, red potatoes, or rice or pasta and salad. Enjoy!
